Chokoholic's filled chocolates are handmade individually - each piece enclosing a carefully prepared centre within a shell of tempered chocolate. Ganache, caramel, fruit-based fillings, praline-style centres and seasonal combinations: each filling is chosen and made to complement the chocolate that surrounds it.
Handmade Chocolates with a Heart
A filled chocolate is one of the most satisfying things to make - and one of the most difficult to make well. The centre has to be the right consistency: firm enough to hold its shape, soft enough to give way when you bite through the shell. The shell itself needs to be thin enough to not overpower the filling, but thick enough to encase it cleanly. And the flavour of the two has to work together.
Chokoholic's filled chocolates are made by hand in small batches. Each piece starts with the chocolate shell - tempered carefully to produce a clean snap and a glossy finish - before the filling is piped or placed inside, the base sealed, and the finished chocolate released from its mould. The result is a small, considered piece of chocolate work: individual, handmade and shaped by the choices made at every stage.
Filling Styles and Categories

Ganache
A ganache filling is made by combining chocolate with cream to create a smooth, rich centre. The ratio of chocolate to cream, and the type of chocolate used, can shift the ganache from firm and intense to light and yielding. Ganache is one of the most versatile filled-chocolate techniques.
Caramel
Caramel fillings bring sweetness, depth and - depending on how they are made - a slight bitterness that balances the chocolate shell. A well-made caramel centre sits cleanly inside the shell and flows slowly rather than running freely.
Fruit-Based Fillings
Fruit can be introduced into filled chocolates through reduced purées, jellies or infused ganaches. The balance between acidity and sweetness is important: a fruit-based filling should complement the chocolate rather than cut through it.
Praline-Style Fillings
Praline-style fillings combine roasted nuts with sugar to produce a paste with a distinct texture and a deep, rounded flavour. Depending on how long the nuts are ground, the texture can range from coarse and grainy to smooth and spreadable.
Creamy or Layered Centres
Some filled chocolates contained layered or creamy centres - combinations of ingredients that introduced different textures within a single chocolate. A thin layer of contrasting ganache beneath a praline base, for example, can change the flavour as you eat through the piece.
Seasonal Flavours
Seasonal filling combinations allow Chokoholic's range to shift throughout the year. Certain ingredients and flavour pairings are associated with particular times of year, allowing the filled chocolate range to feel varied and considered across different collections.
The Craft of a Filled Chocolate
Shell thickness matters more than most people realise. Too thin and the chocolate fractures before the filling has a chance to express itself. Too thick and the shell dominates, dulling the flavour of whatever is inside. Getting that balance right requires attention at every stage: careful tempering, controlled moulding and patience.
The consistency of the filling is equally important. A ganache that is too runny will pool at the base of the chocolate as it sets, creating an uneven finish. A caramel that is over-cooked will set too firm and resist the bite. Each filling type has its own working window — a moment when the temperature, texture and viscosity are right for piping, placing or sealing. Missing that window means starting again.
