How Chokoholic Began
Chokoholic grew from Jamie Wake's deep personal fascination with chocolate – not as a finished product, but as a craft to understand from its origins. He began teaching himself through reading, experimentation and practical trial, developing skills that took patience and time to build. The process itself was the point: understanding why chocolate behaves as it does, and learning to work with it properly.
The business gradually took shape as Jamie's skills deepened – moving from early experiments to a consistent ability to make both chocolate from cocoa beans and handmade couverture creations. Each product was a direct expression of what he was learning and refining. Nothing was rushed. Nothing was mass-produced.
Chokoholic remains a genuinely small-batch operation – intentionally individual, shaped by curiosity and the desire to make each creation properly.
Chocolate Maker and Chocolatier – Two Crafts, One Business
These two terms are often used interchangeably, but they describe genuinely different skills – and Jamie Wake practises both.
The Chocolate Maker
A chocolate maker starts from cocoa beans – selecting, roasting, cracking, winnowing, grinding and refining the raw material into chocolate. This requires understanding the bean, controlling the process and developing the flavour from its most elemental form. The quality and character of the finished chocolate depends entirely on the decisions made at each step.
The Chocolatier
A chocolatier works with finished chocolate – typically high-quality couverture – and uses it to create truffles, bonbons, filled chocolates, moulded pieces and decorative work. The skill lies in tempering, flavour combination, moulding and presentation. A chocolatier's craft is in the transformation of great chocolate into beautiful, considered finished pieces.
Jamie Wake works in both disciplines through Chokoholic – making chocolate from the bean and crafting it into beautiful finished creations.
Craft, Curiosity and Hands-On Learning
Jamie's approach to chocolate is rooted in practical knowledge built through doing. He combines technical understanding - how chocolate behaves under heat, how tempering affects its crystalline structure, how small differences in roasting change flavour - with a genuine creative instinct for design and presentation. Neither side of that equation is secondary to the other.
This dual focus – technical rigour and creative expression – shapes everything Chokoholic produces. Products aren't just meant to taste well; they are designed to look considered and feel individual.
Learning through trial and error, and accepting that patience is part of the process, gives the work its character. Chocolate making rewards attention to detail and punishes shortcuts - and Jamie embraces that.
Everything Handmade. Every Batch Individual.
The decision to keep everything handmade isn't an aesthetic choice - it is a fundamental value. Producing in small batches means each product can be given the attention it needs: properly tempered chocolate, carefully prepared fillings, finished coatings applied by hand.
Variation between individual pieces isn't a flaw – it is the hallmark of handmade work. Each bonbon, truffle or bar carries the small marks of having been made by a person rather than a machine.
This commitment to individual craft means Chokoholic never scales up to mass production, and this has always been intentional. Quality and character came directly from the hands-on process.
